Amita Khar Recipe


INGREDIENTS:
  • Fish head: 500 gms
  • Salt: to rub the fish pieces
  • Papaya: 500 gms
  • Mustard oil: 2tbsps
  • Crushed garlic cloves: 1/2 tbsp
  • Slit green chillies: 2
  • Salt: to taste
  • Sugar: 1/2 tsp
  • Kolakhar: 1 tbsp or sodiumbicarbonate: 1/4 tsp
  • Hot water: 100 ml
  • ginger paste: 1tsp
  • Mustard oil (for garnishing): 1 tbsp
  • Green chillies( for garnishing): 2
DIRECTION: 
  • Make 4 pieces of the fish head.
  • Clean, wash and drain the pieces. Rub salt to it.
  • Peel wash and dice the papayas
  • In a pressure cooker heat oil and fry the garlic till brown.
  • Add the fish head pieces and stir for a minute.
  • Add papaya and stir for about half a minute.
  • Add slit green chillies, salt, sugar and kolakhar or sodium bicarbonate.
  • Add water and close cooker. Bring to full pressure and reduce heat.
  • Cook for another 3 minutes and switch off the gas.
  • When slightly cool open cover and add ginger paste.
  • Stir and close cover.
  • After 2 minutes open cover. The Papaya khar is ready to be served.
  • Garnish with mustadr oil and green chillies.
  • Enjoy AMITAR KHAR with boiled rice.

Today is march 28th and April month is approaching. On 14th of the April month, Assamese new years starts and Bihu the largest festival in Assam is celebrated. Keeping in mind with the initiation of the new year people use to get conscious about health issues as the weather also changes in this particular time. Traditionally on the 1st day of Bohag Bihu or Rongali Bihu people take bath with turmeric paste to keep the skin protected from rashes, skin diseases for the whole year. In addition to that on that day here is a tradition o taking 101 leafy vegetables to save from any diseases for the year.

Assamese Recipe:


This is a very easy recipe to prepare for your dear and near one.  If you are vegetarian and in a mood to have some awesome food this dish.The first thing you must know that it is a dish without extra oil, spice added. If you don’t have ‘sulha’ or roaster, you can do with your gas stove as well, but it may get dirty.
INGREDIENTS:
1.three full sized brinjals
2.chopped onion
3.sawtooth coriander/thai coriander/china coriander leaves (maan dhaniain Assamese)
4.two green chili
PROCEDURE:
Peel the roasted brinjals and chop into small pieces.You may like to give them a look of small cubes, a tablespoon for this gigantic style place them on a chopping board and with a sharp blade knife. If you do not need geometry in your food just smash it as shown in the picture above.Add some sea salt according to your need. The main ingredient which makes the dish different is sawtooth coriander also called Thai coriander, long leaf pointed cilantro, thorny coriander, chinese corlong-leafed coriander. Sprinkle the chopped coriander above the smashed brinjals gently. The aroma from the sawtooth coriander is great.
PRESENTATION: 
There are many ways how you can chop an onion. Ring type or simple chopped good for time preservation.Take one green chilli and slice it medially into two long half.Remove the seeds from the chilli if you do not like two much hot.Go to your kitchen and work on this veg delicacy.Hope you liked it.

Assam Silkworm:



INGREDIENTS:
1. silkworm 200gram
2. 3 to 5 Green Chilies
3. 3 red onions.
4. 2 tablespoons of mustard oil
PROCEDURES:
1. Boil those silkworms for about 2 mins.
2. on a pan fry chopped onions, till becomes red golden color.
3 Now add silkworms and chopped green chilies

chicken isaw

Chicken isaw is a popular street food in Philippine. It's really tasty, somewhat rubbery to chew. The flavor of ginger garlic makes it even more hitting.
Ingredients:


1. chicken intestine 200gram
2. ginger garlic paste 2 table spoon.
3. 2 to 3 onions for garnishing.
4. lemon juice 1 table spoon.

Procedure:

1. Take 200 gram of chicken intestine and wash with warm lime water.

2. Allow to cool before skewering it on bamboo sticks.

3. Grill the chicken intestines to pre-heated grill until brown but not burned.

4. For the vinegar dipping pad, combine red onion, garlic, chillies and blend in a food processor or blender. Put it in a serving dish and add vinegar and calamansi. Season with salt, sugar and pepper. Serve as a dipping sauce on inihaw na chicken isaw, pork isaw and pork ears with chopped cucumber on the side.

Assamese Laupani





INGREDIENTS:

Pork Recipes

INGREDIENTS:
one kilo of pork,
two red onions,
one spoon of mustard oil,
one spoon of black pepper,
and half a spoon of turmeric powder.
PROCEDURES:
1.Mix all the ingredients together nicely. Cut two red onions into large pieces.
2.Fill the bamboo pieces with the marinated pork.
3.Keep the bamboo piece for half an hour till the pork juice comes out.

Bamboo Rice

Rice cooked in Bamboo is a popular dish in Assam known as ''sunga saul''. Bamboo rice has many benefits to health.

INGREDIENTS: one kilo of Sticky rice( Bora saul)
you need pieces of green bamboo with one side open.

PROCEDURE:

1. Keep the sticky rice soaked in water for about 30 minutes. 
2.Taked out the rice and fill the bamboo piece.
3. put the bamboo piece in fire for about one hour till the outer cover of the bamboo gets burned to black.
4. cut out the rice and serve with cury or milk.

INGREDIENTS:

1. 300-gram pork with skin

2. Mint leaves 

3. 3 to 4 onion stalks

4. Ginger and garlic paste two tablespoons

5. Ceylon Olive(jalphai) paste one table spoons 

6. Thai Coriander (maan dhania)

7. mustard oil one tablespoon

8. one Tumeric root

9. Bhut jalakia and green chillis

10. Black pepper

11. Green lemon





PROCEDURE:


1. Marinade the pork with Ginger and garlic paste, Ceylon olive paste, crushed black pepper and half spoon of salt.

2.Keep the pork pieces for refrigeration for about 5 minutes.

3.In a pressure cooker or a boiler put one and a half cup of water and boil the whole pork for about 10 whistles. If you are cooking with boiler keep it for long about 25 minutes.

4.Take out the pieces and cut according to your preferred sizes and take them on a plate for garnishing.

GARNISHING:

Garnish the pork pieces with chopped onion stalks and thai coriander.

Tips: Always remember while garnishing the plate should be of white color.
