Smashed Brinjal (bengena pitika)

Assamese Recipe:


This is a very easy recipe to prepare for your dear and near one.  If you are vegetarian and in a mood to have some awesome food this dish.The first thing you must know that it is a dish without extra oil, spice added. If you don’t have ‘sulha’ or roaster, you can do with your gas stove as well, but it may get dirty.
INGREDIENTS:
1.three full sized brinjals
2.chopped onion
3.sawtooth coriander/thai coriander/china coriander leaves (maan dhaniain Assamese)
4.two green chili
PROCEDURE:
Peel the roasted brinjals and chop into small pieces.You may like to give them a look of small cubes, a tablespoon for this gigantic style place them on a chopping board and with a sharp blade knife. If you do not need geometry in your food just smash it as shown in the picture above.Add some sea salt according to your need. The main ingredient which makes the dish different is sawtooth coriander also called Thai coriander, long leaf pointed cilantro, thorny coriander, chinese corlong-leafed coriander. Sprinkle the chopped coriander above the smashed brinjals gently. The aroma from the sawtooth coriander is great.
PRESENTATION: 
There are many ways how you can chop an onion. Ring type or simple chopped good for time preservation.Take one green chilli and slice it medially into two long half.Remove the seeds from the chilli if you do not like two much hot.Go to your kitchen and work on this veg delicacy.Hope you liked it.
